We custom blend our own seasoning mixes.

“Another really cool thing that we do at Venue is we custom blend our own seasoning mixes. We have three of them that we use in the restaurant for various applications. We have an ancho chili seasoning, a six-pepper seasoning, and what we call “venue spice”, our house seasoning. It’s a hickory smoked garlic salt base and what was really interesting for myself and the culinary team is we actually got to develop these alongside with our spice partner, “International Spices” in a laboratory setting and try out these flavors, cook it on some meat and see how it works. We went through around six or eight adjustments on our original venue spice seasoning mix and they can get a little involved. You know, you think about things like dextrose, corn sugar, and why we’re using that instead of white sugar, how do we keep this so it stays fresh, how do we keep this so it doesn’t cake and what kind of salt do we want to use. I mean, there’s a hundred different salts that you can choose from to go into your seasoning blend, anything from a fine snow salt to a flake sea salt. We opted for the flake salt for this because we really like the adherence that it gets onto the steak. We also used a couple spices in there that are important to accentuate that grilled and smoky flavor. Coriander and caraway are actually two spices that are in our house spice that are a little more unique that you wouldn’t think of, and I won’t give away all the secrets, but I can tell you that when you come to Venue any steak on the menu has that house-made Venue spice on there and you know it’s going to be a great eating experience. Some guests even choose to take it above and beyond and do either the ancho crust or the six-pepper crust and boy is that good too!”
